KABARBARU, JAKARTA– Sweet and sour fish is one of the Indonesian culinary delights loved by all. In addition to its delicious taste, fish itself has a high nutritional value for the body. The following is a recipe for sweet and sour fish, which is very delicious to serve at lunch or dinner with a big family.

Ingredients to be prepared:

  • 1 fish (can be tilapia, Dori, snapper, or carp) weighing about 500 grams, fillet and cut lengthwise
  • Right amount of oil
  • 1 clove garlic (crushed)
  • 1/2 tsp pepper powder.
  • 1 tsp salt
  • 1 tbsp lime or lemon juice
  • 1/2 tsp pepper powder
  • 50 grams of wheat flour
  • 25 grams of cornstarch
  • 1 tsp chicken stock powder

Ingredients for making sweet and sour sauce:

  • 1 carrot (slice thinly)
  • 1 cucumber (cut lengthwise rather thin)
  • 1/2 onion (sliced lengthwise)
  • 5 tbsp tomato sauce
  • 5 tbsp chilli sauce
  • 2 red chillies (sliced lengthwise)
  • 2 cloves garlic (coarsely chopped)
  • 1/2 tsp salt
  • 1/2 tsp pepper powder
  • 1/2 tsp sugar
  • 1 scallion (chopped)
  • 100 grams of pineapple (cut lengthwise rather thin)
  • 1/2 tablespoon cornstarch (dissolve it with 1 tablespoon water first)
  • 200 ml of water

Process of sweet and sour fish recipe:

  1. Wash and clean the fish fillet first (don’t throw away the head and rest of the body), then coat the fish meat with mashed garlic, ground pepper, and salt.
  2. Add the orange or lemon juice, then stand for about 15 minutes.
  3. After letting it sit, roll and coat the fish with seasoning ingredients for fish meat.
  4. Tap with both hands so that the flour sticks perfectly to the body or fish meat.
  5. Next, heat the oil in a frying pan.
  6. Make sure the oil is really hot, then fry the fish until crispy.
  7. Prepare the sweet and sour sauce.
  8. Saute onions, garlic, and red chillies, then stir until fragrant.
  9. Add chilli sauce, tomato sauce, red chilli, salt, pepper, and sugar. Then mix well.
  10. Add carrots and water, then bring to a boil. Then, add the cucumber, scallion, pineapple and cornstarch solution. Stir until thick and even.
  11. Finally, arrange the fish pieces on the body that were not thrown away earlier, then flush with sweet and sour sauce and serve.
